Whole Grain Patties

Ingredients
- 200 g spelt (cooked)
- 100 g wheat (cooked)
- 200 g grain groats (green wheat and spelt mixed)
- 0.5 l vegetable broth
- 1 onion (finely chopped)
- 1 garlic clove (finely chopped)
- 1 tbsp garden herbs (finely chopped)
- 2 tbsp pumpkin seeds
- 50 g sunflower seeds
- 3 tbsp flour (more if needed)
- 1 tsp paprika powder
- 1 tsp cumin (crushed)
- Salt
- Pepper
- 2 Eggs
- 1 egg yolk
- fat for frying (vegetable oil or clarified butter)
- lettuce leaves (for garnish)
Instructions

Bring the broth to a boil, stir in the grain groats and let soak for about 30 minutes, stirring occasionally. Transfer the mixture to a mixing bowl, add the other grain, mix and let cool. Knead the spelt mixture with flour, salt and spices.

Add parsley and mix well. Let everything soak again for another 30 minutes, then knead in onions, garlic and eggs. If the dough is too soft, add a little more flour. Shape the dough into 16 patties and fry slowly in oil or clarified butter over medium heat, turning after about 5-8 minutes.

Plate on bowls with fresh lettuce leaves and serve with yogurt or sour cream dip.
