Ingredients

  • 250 g flour (type 550)
  • 250 g wheat whole grain flour
  • 80 g hearty oatmeal flakes
  • 2 tsp Baking powder
  • 1 tsp sodium bicarbonate
  • 2 tsp salt
  • 1 tsp Caraway seeds
  • 50 g crushed flaxseeds
  • 100 g butter
  • 375 ml buttermilk
  • flour (for dusting)

Instructions

    Preheat the oven to 180°C with top and bottom heat and line a loaf pan with parchment paper.

    Combine the two flours with oatmeal flakes, baking powder, sodium bicarbonate, salt, caraway seeds, and flaxseeds in a bowl. Add butter pieces and work into crumbly dough using a pastry cutter until it resembles coarse crumbs. Pour in buttermilk and stir; the dough should stay crumbly.

    Quickly knead on a well-floured surface (over-kneading makes the dough tough), shape into an elongated loaf, place in the pan, score about 1 cm deep lengthwise, bake for about 1 hour (test with a skewer). Cool before removing from the pan.
