Vegan Tofu Cabbage Sandwich with Tomato and Cabbage Salad

Ingredients
- 250 g White cabbage
- 2 tbsp white wine vinegar
- 2 tbsp Vegetable oil
- 0.25 tsp cumin seeds
- sugar
- Salt
- Pepper
- 2 Tomatoes
- 2 small onions
- 400 g smoked tofu (2 packages approx 200 g each)
- 2 tbsp white wine vinegar
- 2 tbsp Maple syrup
- 1 tbsp sweet paprika
- Herb salt
- pepper from the grinder
- 2 tbsp Vegetable oil
- 4 wheat rolls (kaiser buns)
- 4 tbsp sweet mustard

Remove outer leaves of cabbage, cut off core and slice finely with a vegetable peeler. In a bowl combine with vinegar, oil, cumin, sugar, salt, pepper; knead well, season, and let rest at least 1 hour before tasting again.

Wash tomatoes and slice thinly. Peel onions and dice finely. Slice tofu horizontally. Mix vinegar, maple syrup, paprika in a small bowl, season with herb salt and pepper. In hot oil pan brown tofu slices with onions, turning them. Add the seasoning mixture, warm briefly, then remove from heat.

Cut rolls horizontally, spread mustard on lower halves, top with tomato slices. Spread cabbage salad over tomatoes, then add tofu slices with onions. Cover and wrap in butter paper if desired.
