The Whole‑grain Blackberry Crumble with Peach and Ginger from Spoonsparrow is a healthy dessert that everyone will enjoy!

Ingredients

  • 60 g coconut palm sugar
  • 75 g fine whole wheat flour
  • 1 tsp ground ginger
  • a pinch of salt
  • 60 g Butter
  • 1 fully ripe peach
  • 250 g blackberries
  • 1 Organic Orange

Instructions

  1. 1.

Mix the coconut palm sugar (except for a couple tablespoons) with the flour, ginger and a pinch of salt in a food processor using the blade until combined.

  2. 2.

Add the butter pieces and continue mixing until pea‑size lumps form. (Alternatively, you can make the crumble with a hand mixer or by hand.)

  3. 3.

Wash, pit, and roughly cube the peach. Rinse the blackberries cold. Wash the orange hot, dry it, and finely grate its zest.

  4. 4.

Combine the fruit in a bowl with the remaining sugar and orange zest, and let sit briefly.

  5. 5.

Transfer the fruit mixture into small oven‑proof dishes.

  6. 6.

Sprinkle the crumble over the fruit and bake in a preheated oven at 200 °C (convection: 180 °C; gas: level 3) for about 25 minutes until golden brown. Sprinkle with powdered sugar if desired before serving.
