Green Plum Cake

Green plum cake with apple sauce: green plums are juicy and intensely aromatic – a must-try!

Ingredients

  • 600 g green plums
  • 2 Eggs
  • 1 pinch salt
  • 80 g sugar
  • 200 g bananas (1 banana)
  • 125 g unsweetened applesauce
  • 0.5 tsp cinnamon
  • 120 g flour
  • 0.5 tsp Baking powder
  • 30 g walnut kernels

Instructions

    Wash the green plums, halve them and remove the pits.

    Separate the eggs. Beat the egg whites with a pinch of salt in a tall bowl using a hand mixer until stiff peaks form, gradually adding the sugar.

    Peel the banana, place it on a plate and mash it finely with a fork. Mix the applesauce, cinnamon and yolks well in a bowl.

    Sift together the flour and baking powder, then stir briefly into the mixture.

    Fold in the beaten egg whites gently.

    Chop the walnuts with a large knife.

    Line the bottom of a 20 cm springform pan with parchment paper. Pour in the batter, top with green plums and sprinkle with walnuts. Bake at 180 °C (fan: 160 °C, gas: level 2-3) for 30 minutes. Cool on a wire rack, release from the pan and serve.
