Berry Cocktail
A delicious berry cocktail with cookie crumbs: they taste wonderful and the variety of berries is simply great for overall well-being!
Ingredients
- 600 g mixed berries (e.g., strawberries, raspberries, blackberries, gooseberries, blueberries)
- 0.5 lime
- 4 whole‑grain butter cookies
- 0.5 Vanilla pod
- 3 egg yolks
- 100 g liquid honey (6 Tbsp)
- 100 ml light grape juice
- 4 sprigs Mint
Instructions

Wash or pick the berries according to type, then clean and stem them if necessary.

Rinse half a lime hot, dry it, and grate about 1 tsp of zest finely. Squeeze the lime and measure out 1 Tbsp of juice.

Carefully mix the lime zest and juice with the berries and distribute everything into four glasses or bowls.

Crush the cookies by hand roughly.

Split the vanilla pod lengthwise and scrape out the seeds.

Separate the eggs (reserve the whites for another use). In a mixing bowl, combine the vanilla seeds, egg yolks, honey, and grape juice.

Whisk with a hand mixer over a hot water bath until a thick, foamy custard (sabayon) forms.

Wash the mint, shake it dry, and pluck the leaves. Pour the sabayon over the berries. Sprinkle cookie crumbs on top, garnish with mint, and serve immediately.
