Chia Chocolate Mousse with Raspberry Layer

The Chia Chocolate Mousse with Raspberry Layer by Adaeze Wolf is not only a creamy delight for vegans!

Ingredients

  • 50 g chia seeds (organic quality)
  • 20 g raw unsweetened cocoa powder
  • 1 pinch Naturally Good Rise & Shine spice or cinnamon powder
  • 2 tbsp maple syrup (organic quality)
  • 25 g almond butter (organic quality)
  • 400 ml almond drink (almond milk) (or plant-based drink of choice)
  • 250 g raspberries (fresh or frozen)
  • 4 tbsp soy yogurt alternative (or other plant-based yogurt alternative of choice)

Instructions

    For the chia chocolate mousse, place the chia seeds in a blender and pulse into a fine powder. Add cocoa powder, Naturally Good Rise & Shine spice, maple syrup, almond butter, and almond drink, then blend until smooth.

    Divide the chia chocolate mousse among four glasses and refrigerate for 1–2 hours. In the meantime, transfer raspberries to a bowl and puree with an immersion blender until very smooth.

    Spoon one tablespoon of plant yogurt onto each glass of chia chocolate mousse. Add the raspberry layer on top and serve immediately.
