White Chocolate Cream Cheese Tart with Peaches on Crumb Base

Ingredients
- 250 g Amarettini
- 150 g soft butter
- 4 sheets of white gelatin
- 200 g white chocolate
- 800 g reduced‑calorie cream cheese
- 50 g fine sugar
- zest of 0.5 untreated lemons
- 6 tbsp almond liqueur (optional peach liqueur)
- 1 can (425 ml) peaches
- 1 packet of clear tart glaze powder
- mint for serving
Instructions

Crush the Amarettini finely (best in a food processor) and mix with soft butter into a dough. Line the bottom of a 26 cm springform pan with parchment paper. Press the Amarettini dough into the base. Chill for 1 hour.

Soak gelatin in cold water. Break chocolate into pieces, place in a bowl, and melt over a hot water bath.

Whisk cream cheese with sugar and lemon zest. Warm liqueur and dissolve the pressed gelatin in it. Stir this into the cream cheese mixture. Add melted chocolate and mix until smooth. Spread the chocolate‑cream cheese mixture over the base. Chill for 2 hours.

Drain peaches and reserve the juice. Dilute peach juice to 250 ml with water. Prepare the tart glaze according to package instructions using the diluted juice. Slice peaches lengthwise and arrange on the tart. Pour glaze over the peaches. Chill again for 1–2 hours. Carefully remove the tart from the pan, place on a serving plate, and garnish with mint leaves.
