White Cabbage Salad

Ingredients

  • 500 g small white cabbage (1 small head)
  • 1 Spring onion
  • 120 ml Vegetable broth
  • 2 tbsp white wine vinegar
  • 1 tbsp oil
  • Salt
  • Pepper (freshly ground)
  • 50 g Heavy cream
  • 1 apple
  • 2 tsp pumpkin seeds

Instructions

    Clean the cabbage and cut into fine strips or shave. Mix with 1 tsp salt, knead well and let rest for 1 hour.

    Wash spring onions, slice thinly. Toast pumpkin seeds in a dry pan until fragrant, set aside.

    Heat vegetable broth and add vinegar, oil, and pepper; pour over cabbage, mix thoroughly and let sit for about 30 minutes.

    Drain the salad through a sieve, transfer to a bowl, stir in cream and season heavily. Wash apple, quarter it, remove core, slice thinly across, and fold into the salad. Plate on bowls, sprinkle with pumpkin seeds and serve.
