Fruitful Chicory Salad with Fried Chicken Breast

Ingredients
- 100 g yogurt
- 50 g mayonnaise
- 1 EL vinegar
- Salt
- Cayenne pepper
- paprika powder (sweet)
- curry powder
- 60 g cashew nuts
- 3 chicory
- 2 mandarins
- 2 chicken breast fillets (≈120 g each)','2 EL flour','2 EL rapeseed oil

Whisk the yogurt with mayonnaise and vinegar until smooth. Season with salt, pepper, paprika, and curry. Chill the dressing.

Roast the cashew nuts in a non-stick pan without fat until pale yellow. Wash and trim the chicory. Set aside some whole leaves for garnish; slice the rest into ~1 cm thick strips. Peel the mandarins around the edges with a sharp knife. Separate the fillets from the skin. Mix them with the chicory. Rinse the meat and pat dry. Season with salt, pepper, a touch of paprika and curry, then coat in flour. Fry in hot oil for about 2 minutes per side until crisp, let rest briefly, and cut into strips.

Arrange the chicory, mandarin slices, nuts, and chicken on plates; garnish with whole chicory leaves. Drizzle the dressing over the salad and serve.
