Ingredients

  • 4 small ciabattas
  • 300 g yellow bell peppers
  • 300 g red bell peppers
  • 2 Garlic cloves
  • 1 tbsp freshly chopped basil
  • 2 tbsp olive oil
  • 1 tbsp freshly grated Parmesan
  • Salt
  • Cayenne pepper
  • vegetable oil (for the tray)

Instructions

    Halve the ciabatta rolls. Preheat the oven to 220°C with upper heat or grill.

    Wash, halve, and trim the bell peppers, then place them skin-side up on an oiled baking sheet. Roast in the oven for about 10 minutes until the skins blister and turn slightly black. Remove from the oven and cover with a damp kitchen towel. Let cool, then peel off the skins and cut into large pieces.

    Peel and finely chop the garlic cloves, then mix them with basil, olive oil, and parmesan. Add this mixture to the pepper pieces, season with salt and cayenne pepper, and spread onto the rolls. Replace the tops and slice apart as desired before serving.
