Ingredients

  • 2 cans white beans (240 g net weight)
  • 2 tbsp peppermint leaves, finely chopped
  • 1 tbsp bean herb, finely chopped
  • 2 tbsp white wine vinegar
  • 1 tsp balsamic vinegar
  • Salt
  • ground pepper
  • pinch ground cumin
  • 5 tbsp olive oil

Instructions

    Drain the beans in a sieve, rinse and let them drain.

    Mix the beans with the herbs.

    Whisk together vinegar, salt, pepper, and cumin. Fold in the olive oil, taste, and combine with the beans. Let rest for 30 minutes. Serve garnished with peppermint leaves.
