Ingredients
- 400 g green band noodles
- 0.8 kg white asparagus
- 300 g shrimp
- 1 EL olive oil
- 1 EL Butter
- 1 lemon (organic, zest and juice)
- 50 g browned liquid butter
- Salt
- 200 ml hot Hollandaise sauce
- lemon wedges
Instructions

Wash the asparagus, peel thoroughly and cut off the woody stems. Cook the noodles according to package instructions in plenty of salted water. Simultaneously cook the asparagus in boiling salted water with a splash of lemon juice and butter for about 18 minutes, then carefully drain.

Rinse the shrimp, pat dry, and sear them in oil for 1–2 minutes on all sides, adding lemon zest and juice.

Arrange the noodles and shrimp on plates, drizzle with browned butter, add the asparagus, and garnish with Hollandaise sauce and lemon wedges before serving.
