Ingredients
- 400 g penne
- Paprika (1 red and 1 yellow per person)
- 2 Garlic cloves
- 4 tbsp olive oil
- 125 ml Vegetable broth
- 1 can tuna (natural, 140 g drained weight)
- Basil (4 leaves)
- Mint (4 leaves)
- 2 tbsp large capers
- Salt
- pepper (ground)
Instructions

Cook pasta in plenty of boiling salted water until al dente.

Wash, trim, halve, deseed and thinly slice the bell peppers, removing all white membranes.

Peel and finely chop the garlic. Heat oil in a large pan. Sauté the peppers and garlic briefly. Add broth, cover, and simmer over medium heat for 5 minutes. Drain tuna and flake with a fork. Chop herbs and combine with tuna and capers, adding to the pepper strips. Warm through and season with salt and pepper. Drain pasta, mix with sauce, and serve on plates.
