White Asparagus Salad with Strawberries

White asparagus salad with strawberries from Spoonsparrow: Enjoying vegan food is easy, aromatic and this salad tastes great with everyone!

Ingredients

  • 800 g white asparagus
  • 3 tbsp grape seed oil
  • 1 tsp whole grain sugar
  • 1 tbsp Lemon Juice
  • Salt
  • 350 g strawberries
  • 2 tbsp Apple cider vinegar
  • 1 tbsp freshly chopped mint

Instructions

    Peel the asparagus and cut diagonally into thin slices. Warm 1 tbsp oil in a pan over low heat, sauté the asparagus for 1–2 minutes until translucent. Sprinkle with sugar, let caramelize slightly, then deglaze with a splash of water. Add lemon juice, season with salt, cover and cook for about 5 minutes until tender.

    Meanwhile wash and trim the strawberries; cut into halves or quarters depending on size. Mix with vinegar and remaining oil, then add the asparagus.

    Let the mixture rest for about 10 minutes to meld flavors and cool slightly.

    Taste, sprinkle with mint, and serve warm or at room temperature.
