White Asparagus in Paper Packets
White asparagus wrapped in parchment paper with carrots and ginger: asparagus contains a considerable amount of folic acid. This B vitamin often falls short in the diet.
Ingredients
- 700 g white asparagus (14 spears)
- 6 slender carrots
- 20 g ginger (1 piece)
- 1 small organic lime
- 2 tbsp olive oil
- Salt
- sugar
- Pepper
Instructions

Wash and peel the asparagus, trimming off the woody ends.

Wash, peel, and cut the carrots lengthwise in halves or quarter larger pieces.

Peel the ginger and dice it finely. Wash the lime, dry rub it, halve it and slice into rounds.

Brush a 40x40 cm piece of parchment paper with oil and sprinkle with salt, sugar and pepper.

Lay the asparagus, carrots, ginger and lime on the paper and season with salt and pepper.

Fold the paper over the vegetables and tie securely with kitchen twine. Roast in a preheated oven at 200 °C (fan 180 °C, gas: level 3) on the middle rack for 25‑30 minutes. Let rest for 2 minutes before serving.
