Ingredients
- 600 g green asparagus
- 2 stalks lemongrass
- 400 ml coconut cream
- 200 ml vegetable broth
- chili powder
- Salt
- Pepper
- 2 tbsp lemon juice
- lemongrass (for garnish)

Wash the lemongrass and cut it lengthwise in half. Wash the asparagus, trim the woody ends, and cook the asparagus in salted water with lemon juice and lemongrass for about 12 minutes. Remove the asparagus from the broth, cut off the tips, and keep them warm in a little broth for garnish.

Measure out 200 ml of the remaining broth, add the vegetable broth, bring the remaining asparagus to a boil again, then blend well. Stir in the coconut cream and season with chili powder, salt, and pepper.

Divide the vegan asparagus soup into four bowls, garnish with the asparagus tips, sprinkle with chili flakes, and serve with lemongrass.
