Spicy Asparagus Tortilla

A spicy asparagus tortilla is the perfect after-work recipe – quick to make, healthy and made with fresh ingredients.

Ingredients

  • 200 g white asparagus
  • 200 g green asparagus
  • Salt
  • 8 leaves of green salad
  • 100 g sun-dried tomatoes (in oil)
  • 40 g almonds (peeled)','salt','cayenne pepper','1 handful coriander leaves','4 tortilla sheets

Instructions

    Peel the entire white asparagus and only the lower third of the green asparagus. Slice both diagonally into thin strips. Blanch the white asparagus in salted water for about 5 minutes. Add the green asparagus and cook together for another 5 minutes. Shock in cold water and drain.

    Wash and clean the salad leaves. Blend the tomatoes with almonds and a little tomato oil in a blender until smooth. Season with lemon juice, salt and cayenne pepper. Wash the coriander, pluck the leaves and pat them dry.

    Warm the tortilla sheets briefly according to package instructions and spread the tomato paste on them. Top with salad leaves, sprinkle with coriander and arrange the asparagus on top. Roll up and serve.
