Grape and Anchovy Stuffed Grape Leaves with Mozzarella

Ingredients
- 3 cloves garlic
- 4 anchovis
- 4 balls mozzarella (≈125 g each)
- 12 grape leaves (in brine)
- olive oil
- 2 tbsp thyme
- 1 tbsp lemon zest
- black pepper (freshly ground)
- 400 g seedless red grapes
- 1 tbsp fresh basil
- 1 tbsp fresh parsley
- 1 tsp fresh rosemary
Instructions

Preheat the oven to 80°C (upper and lower heat).

Peel the garlic, finely chop half and set aside. Drain the anchovis and finely chop them too. Drain the mozzarella.

Arrange three grape leaves overlapping into a circle, place a mozzarella ball on top, drizzle with olive oil, sprinkle thyme and lemon zest, scatter some garlic, pepper, and seal into parcels. Tie with kitchen twine if desired and sear in a hot pan with a little oil for about 5 minutes all sides. Remove, keep warm in the oven, and repeat with remaining leaves and mozzarella.

Heat the grill midway through.

Wash and pat dry the grapes. Drizzle with olive oil and grill on the hot grill for 3-5 minutes.

Mix the remaining garlic with herbs and 3 tbsp oil, season with salt and pepper. Arrange the mozzarella parcels with grapes on plates and drizzle with herb oil before serving.
