Watermelon Jelly

Ingredients
- 2 kg ripe watermelon (about 1,8 - 1 ripe watermelon)
- 0.5 lemon (juice)
- 125 g sugar
- 100 g cornstarch
- 50 g coarsely chopped dark chocolate
- 50 g lemon zest (finely diced)
- 80 g chopped pistachios
- 0.5 tsp cinnamon powder
- 200 g whipping cream
- 2 tbsp powdered sugar
- 6 serving molds (200 ml each)
Instructions

Cut the watermelon flesh, dice it and pass through a sieve. Measure 1 liter of the melon puree and add lemon juice to a pot.

Mix sugar with cornstarch and stir into the melon puree. Bring everything to a boil and simmer while stirring for about 3 minutes until thickened, then let cool.

Stir chocolate, lemon zest, 30 g pistachios and cinnamon into the cold melon jelly.

Rinse the molds with cold water, fill them with the melon jelly and refrigerate for 3-4 hours until set.

Just before serving whip cream with powdered sugar, fold in about 40 g pistachios, then pipe it with a large star tip. Place the melon dessert briefly in hot water, then pour onto plates and decorate with piped cream. Garnish with mint leaves and sprinkle remaining pistachios on top.
