Ingredients

  • 1 kg watermelon
  • 1 lemon (juiced)
  • 500 g gelesugar (2:1)

Instructions

    Cut the watermelon flesh into small cubes, removing the seeds. Place in a pot, add 50 ml water, and slowly heat while stirring occasionally. Simmer for 5 minutes, then set aside to cool.

    Mix the sugar into the cooled mixture, add lemon juice, and let it steep for about 2 hours. Reheat with stirring and simmer until bubbling for 4-6 minutes. Fill jars to the brim, seal tightly, place on lids for 5 minutes, flip, and allow to cool.
