Ingredients

  • 500 g fennel
  • 1 chili pepper
  • 0.25 l wine vinegar
  • 0.25 l water
  • 25 g sugar
  • 1 tsp green peppercorns
  • 1 star anise
  • 1 sprig rosemary
  • 8 garlic cloves
  • Salt

Instructions

    Wash the fennel, trim and quarter lengthwise, blanch in boiling salted water for 4 minutes, remove and drain well.

    Peel the garlic, finely dice it, then combine with vinegar, water, chili pepper and spices; bring to a boil and pour over the fennel. Cover and let stand overnight.

    The next day, drain the vegetables, reheat the liquid, fill the prepared jar, and seal tightly.
