Watermelon Ice with Blueberries

Ingredients

  • 50 g maple syrup
  • 1 organic lemon (juice and zest)
  • 500 g watermelon flesh
  • 250 g blueberries

Instructions

    Boil the maple syrup with 150 ml water, lemon juice and zest in a pot. Let it simmer for a few minutes until the syrup has dissolved, then allow to cool.

    Cut the watermelon into pieces and puree. Strain through a fine sieve to remove seeds. Rinse the berries, wash them, and mix them with the syrup into the watermelon purée. Fill 8 popsicle molds and freeze for at least 5 hours. Depending on the mold, place lids with sticks or insert sticks into the frozen ice after about 1–2 hours.
