Ingredients

  • 4 eggs (whole or separated)
  • 4 tbsp cold or warm water
  • 200 g sugar
  • 1 tbsp vanilla sugar (or/and grated lemon zest)
  • 200 g Flour
  • 1 tsp Baking powder

    For preparing the sponge batter, there are three methods: Method 1 (separated eggs, quick sponge): Beat egg whites with cold water until stiff peaks form, gradually adding sugar by spoonfuls and whipping to a firm consistency. Fold in beaten yolks and flavorings. Sift flour with baking powder over the mixture and gently fold in. Method 2 (separated eggs, for larger batches): Whisk yolks with warm water and two-thirds of the sugar until frothy. Add flavorings. Beat egg whites stiffly, letting remaining sugar drop in by spoonfuls. Gently fold the foam into the yolk mixture. Sift flour with baking powder over both and gently fold together. Method 3 (whole eggs): Whisk eggs with warm water and sugar to a very good frothy mass. Add flavorings. Sift flour with baking powder over the mixture and beat with a whisk. Note: The water for methods 2 and 3 should be well warm to hot, but not boiling.

    Fill the prepared pan (grease and flour the bottom of a springform or line with parchment paper) and bake immediately. Average baking time for a cake base is 35 minutes at 180 °C.
