Ingredients
- 6 sheets of spring roll wrapper (frozen) (frozen)
- 1 onion (finely chopped)
- 1 garlic clove (finely chopped)
- 2 slices ginger (finely chopped)
- 1 carrot (julienned)
- 300 g cabbage (thinly sliced)
- 2 tbsp oil
- 3 tbsp tomato paste
- Salt
- Pepper
- 1 tsp curry powder
- 100 ml Vegetable broth
- 1 Egg white
- 1 kg fat (or oil, for frying)

Let spring roll wrappers thaw and cut each sheet into four squares. Stir-fry all vegetables in very hot oil in a pan or wok, season, add tomato paste and pour in broth. Simmer while stirring until the liquid reduces. Let the filling cool and place 1 tbsp on each wrapper square, brush edges with egg white and fold corners into triangles.
