Ingredients

  • 6 sheets of spring roll wrapper (frozen) (frozen)
  • 1 onion (finely chopped)
  • 1 garlic clove (finely chopped)
  • 2 slices ginger (finely chopped)
  • 1 carrot (julienned)
  • 300 g cabbage (thinly sliced)
  • 2 tbsp oil
  • 3 tbsp tomato paste
  • Salt
  • Pepper
  • 1 tsp curry powder
  • 100 ml Vegetable broth
  • 1 Egg white
  • 1 kg fat (or oil, for frying)

Instructions

    Let spring roll wrappers thaw and cut each sheet into four squares. Stir-fry all vegetables in very hot oil in a pan or wok, season, add tomato paste and pour in broth. Simmer while stirring until the liquid reduces. Let the filling cool and place 1 tbsp on each wrapper square, brush edges with egg white and fold corners into triangles.

    Fry the filled wrappers until crispy golden brown.
