Ingredients

  • 1 tbsp oil
  • 1 Carrot
  • 1 small onion
  • 1 Garlic clove
  • 2 tsp mild curry paste
  • 1 tsp tomato paste
  • 300 g tofu (1 package)
  • 25 g whole‑grain flour
  • 25 g chopped walnuts (optional)
  • 1 egg
  • flour (for dusting the burgers)
  • Salt
  • ground pepper
  • oil (for frying)
  • 600 g Carrots

  • 1 Shallot
  • 1 tsp sugar

Instructions

    Peel and finely dice the carrot, onion, and garlic for the patties; sauté in hot oil, add curry paste and tomato paste, stir, heat through, then remove from heat.

    Crush the tofu with a potato masher or press it through a sieve, combine with the vegetables in a bowl. Mix in whole‑grain flour, chopped walnuts, and egg; season with salt and pepper. Form into 4 patties, dust both sides lightly with flour. Fry each side in hot oil for about 3–4 minutes until golden brown, then drain on kitchen paper.
