Ingredients
- 1 onion
- 1 tbsp butter
- 2 starchy potatoes (cooked)
- 200 g knödel bread
- 250 ml heavy cream
- 0.125 l sour cream
- 2 Eggs
- 2 tbsp flour
- Salt
- 1 tbsp freshly chopped parsley
- 200 g grated Pinzgauer beer cheese (or mountain cheese)
- butter for frying
Instructions

Peel and finely dice the onion, then sauté it in butter until soft but not browned. Drain the cooked, peeled potatoes through a sieve.

In a large bowl combine knödel bread, cream, sour cream, eggs, flour, salt, parsley, potatoes, onions, and cheese to form a compact dough; let rest for about 20 minutes.

Using wet hands shape the dough into patties about 6–8 cm in diameter and flatten slightly. Fry the patty slices slowly in hot butter for 3–4 minutes on each side until golden brown.
