- 40 g chopped walnuts
- 40 g ground walnuts
- 200 g heavy cream
- 300 ml milk
- 1 vanilla pod
- 5 tbsp sugar
- 5 egg yolks
- 50 ml Italian walnut liqueur
- 0.25 tsp cinnamon powder
- powdered sugar (for dusting)

Roast the walnut kernels without fat and set aside.

Whisk milk and cream with the vanilla pod and scraped-out seeds, then bring to a boil.

Beat egg yolks with sugar in a bowl until creamy. Stir the hot milk-cream mixture into the yolk custard, pour everything back into the pot, and whisk over low heat to thicken into a sauce without boiling.

Strain the vanilla sauce through a sieve, let it cool while dusting the surface lightly with sugar to prevent skin formation.

Stir in ground walnuts, liqueur, and cinnamon. Freeze the mixture in an ice cream maker (or pour into a shallow metal bowl, freeze for about 3 hours, stirring vigorously every 30 minutes).
