Christmas Apple Dessert with Meringue

Ingredients
- 3 apples
- 1 untreated orange
- 2 tbsp honey
- 0.5 cinnamon stick
- 1 pinch cloves powder
- 4 speculaas cookies
- 2 egg whites
- 50 g powdered sugar

Peel the apples, remove cores, and dice them small. Wash the orange hot, dry it, and finely grate its zest. Squeeze out the juice and combine with apples, honey, cinnamon, and cloves in a pot. Bring to a boil and simmer for about 5 minutes until the apples soften. Remove from heat, discard cinnamon sticks, and puree finely. Strain through a sieve and divide the compote into four small heat‑resistant glasses. Let cool.

Preheat the oven to 220°C (Oven rack).

Crush the cookies over the compote. Beat the egg whites until stiff peaks form, gradually adding powdered sugar until the mixture is firm and holds peaks. Fold in orange zest and spread the meringue onto the glasses. Bake under the grill for 2–5 minutes until the meringue turns light brown with crisp edges. Serve immediately.
