Walnut Cookies

Ingredients

  • 80 g ground walnuts
  • 70 g walnut halves
  • 125 g soft butter
  • 2 Eggs
  • 100 g sugar
  • 2 tsp dark cocoa powder
  • 1 pinch cinnamon
  • 200 g Flour
  • baking paper (for the tray)

Instructions

    Chop the walnut halves very finely. Whip the butter in a mixing bowl until soft. Separate the eggs. Beat the yolks with the sugar until pale and fluffy. Whisk the whites with salt until very stiff. Fold the chopped walnuts into the butter mixture. Spoon the meringue over the top. Mix the flour, cocoa, ground walnuts, and cinnamon together, then add it over the meringue. Stir everything in with a spoon.

    Preheat the oven to 180°C. Line a baking tray with parchment paper. Using a tablespoon, drop small heaps of dough onto the tray with enough space between them (the cookies will spread slightly while baking). Bake on the middle rack for about 15 minutes until golden yellow. Cool on a wire rack.
