Walliser Onion Salad

The Walliser Onion Salad from Spoonsparrow is a true classic and probably contains more nutrients than one might think!

Ingredients

  • 4 large onions
  • hot water
  • 50 g breakfast bacon
  • 4 tbsp broth (in cubes)
  • 2 tbsp vinegar
  • Salt
  • Pepper
  • 1 stalk Parsley

Instructions

    Peel the onions and slice them thinly. Rinse with hot water and drain on a sieve.

    Cut the bacon into small cubes and fry until crisp, then add the onion slices. Add the vegetable broth and steam the onions for about 4 minutes over low heat.

    Finally, add the vinegar. Wash the parsley, shake dry, and roughly chop it. Season the Walliser Onion Salad with salt and pepper and serve garnished with chopped parsley.
