Ingredients
- 250 g waxy potatoes
- 3 eggs
- Salt
- 100 g flour
- 100 ml whipping cream
- nutmeg
- liquid butter (for the waffle iron)
- 150 g smoked salmon (slices)
- chopped dill (for garnish)
Instructions

Cook the potatoes, peel and press through a potato masher or mash carefully. Separate the eggs. Beat the egg whites with a pinch of salt until stiff.

Preheat a waffle iron. Mix the potato purée with the yolks, flour and cream, season with salt and nutmeg. Gently fold in the beaten egg whites. Brush the waffle iron with butter and bake portions of 8 potato waffles.

Arrange the waffles on plates, top with smoked salmon slices, and sprinkle everything with chopped dill. Serve with herb sour cream or crème fraîche.
