Vitamin Crunchy Cold Bowl

Packed with vitamin B6 for a good mood and a "smart little brain" hidden in this vitamin crunch cold bowl.

Ingredients

  • 600 g honeydew melon (0.5 honeydew melons)
  • 150 g raspberries
  • 1 EL honey
  • 150 g apricots (3 apricots)
  • 3 slices whole‑grain crouton

Instructions

  1. 1.

    Use a spoon to remove the seeds from the honeydew, cut into wedges and peel. Roughly cube the flesh and place it in a tall vessel or bowl.

    Rinse the raspberries, add them with the honey to the melon and blend finely with a stick blender.

  3. 3.

    Wash the apricots, pat dry, halve and pit them.

  4. 4.

    Cube the apricot flesh, mix into the melon‑raspberry puree and chill for about 10 minutes.

    Just before serving place the croutons in a freezer bag. Roughly crush with a rolling pin or meat mallet.

    Fill two bowls with the chilled mixture, sprinkle the crumbs on top and serve immediately.
