Ingredients

  • 1 large endive head
  • 1 Red Onion
  • 2 carrots
  • 1 bulb fennel
  • 1 red bell pepper
  • 1 yellow bell pepper
  • alfalfa sprouts, mustard sprouts (½ cup each)
  • 2 Garlic cloves
  • 3 tbsp red wine vinegar
  • 1 tsp Mustard
  • parsley, basil, chives (½ bunch each)
  • 5 tbsp olive oil
  • salt and pepper

Instructions

    Wash the salad, pat dry and cut into wide strips. Wash, peel and slice carrots diagonally. Wash fennel, trim the core and cut crosswise into fine strips. Halve bell peppers, remove seeds, wash, blot dry and slice into thin strips. Arrange all on plates with the sprouts.

    For the dressing, peel and crush garlic, then mix with vinegar, mustard, salt, pepper and olive oil. Chop herbs finely and fold in. Drizzle sauce over salad and garnish with basil.
