Ingredients

  • 1.2 kg ripe mango
  • 8 limes
  • 1 kg gelatin sugar (1:1)
  • 6 kaffir lime leaves

    Peel the mangos, cut the flesh away from the pit and dice half of it coarsely and the other half finely. Puree the coarse pieces finely. Thoroughly peel the limes and filet them, catching the juice. Combine both with the mango cubes and puree, weigh and mix. Stir in an equal amount of sugar, add the kaffir lime leaves, and let sit for about 2 hours.

    Boil while stirring and simmer for about 4 minutes until sparkling (do a gel test). Transfer to prepared jars (one jar per sheet), seal tightly, and allow to cool.
