Strawberry-ginger Marmalade with Vanilla

Ingredients
- 500 g strawberries
- 500 g rhubarb
- 1 Vanilla bean
- 1 lemon (juice)
- 500 g 2:1 gelatin sugar

Clean and wash the strawberries, then roughly mash them in a pot. Clean, wash and cut the rhubarb into pieces. Split the vanilla bean lengthwise, scrape out the seeds and add the bean, sugar and lemon juice to the strawberries and rhubarb; let it steep for 1 hour.

Then bring everything to a boil while stirring and simmer for 4 minutes (do a gelling test).

Remove from heat, puree with an immersion blender until smooth, then reheat. After a gelling test, immediately pour into prepared jars. Turn the jars upside down, let them cool for five minutes, flip them back over and allow the strawberry-ginger marmalade with vanilla to set.
