Ingredients

  • 0.5 tsp mustard
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp white wine vinegar (or red wine vinegar)
  • 6 tbsp oil (sunflower or olive oil)
  • 1 tbsp freshly chopped herbs (e.g., parsley, chives, dill, tarragon)

Instructions

    Whisk mustard, salt and pepper with the vinegar until the salt dissolves. Add the oil and vigorously fold in with a fork.

    Fold in the chopped herbs. This dressing pairs well with all leafy salads, cucumber and tomato salad, and also with salads made from cooked vegetables such as beans, asparagus or potatoes.
