  • 2 EL red wine vinegar
  • 0.5 TL mustard
  • Salt
  • Pepper (freshly ground)
  • 6 EL oil (e.g., olive oil)
  • 1 shallot (finely diced)
  • 1 crushed garlic clove
  • pine nuts, chopped
  • 1 EL chopped herbs

    Whisk together the vinegar, mustard, salt and pepper. While whisking, slowly drizzle in the oil to emulsify. Taste and adjust seasoning, then fold in the shallot, garlic, pine nuts and herbs as desired.
