Ingredients
- 1 egg yolk
- 1 tbsp Lemon Juice
- 125 ml sunflower oil
- 4 tbsp Yogurt
- Salt
- pepper (ground)
- 100 g Roquefort
- whipped cream (for refinement)

Whisk the egg yolk and lemon juice, then slowly drizzle in the oil while continuously whisking with a hand whisk until a smooth emulsion forms. Finally fold in the yogurt and season with salt and pepper.

Use a fork to finely crumble the Roquefort and mix thoroughly with the prepared mayonnaise. Refine with whipped cream.
