Vinaigrette

Ingredients
- 1 Shallot
- 60 ml White wine vinegar
- Salt
- Pepper (freshly ground)
- 1 pinch sugar
- 100 ml olive oil

Prepare all required ingredients on the work surface. Peel the skin and roots of the shallot with a small knife. Measure out the vinegar and oil.

Halve the shallot lengthwise. Place it flat side down on the wooden board. With a sharp knife, make several shallow cuts along its length, but do not cut all the way through; it should still hold together at one end. Turn the shallot and then dice it finely across the cuts.

Pour the vinegar into a small bowl.

Sprinkle a pinch of salt over it and grind some pepper into the vinegar.

Add the sugar now. If you prefer less acidity, use a bit more.

Whisk the salad sauce with a small whisk. All ingredients should dissolve in the liquid.

Slowly drizzle in the oil while continuing to whisk until an emulsion forms.

Finally add the finely diced shallot cubes and stir well.

Store the vinegar‑oil vinaigrette in the bowl until just before serving. Stir again briefly to mix all components, then drizzle over the salad right before serving so it doesn’t collapse.
