Vegan Potato Bean Salad

Ingredients
- 800 g waxy potatoes
- Salt
- 250 g green beans
- 4 Spring Onions
- 1 stalk oregano
- 120 ml Vegetable broth
- 1 tsp hot mustard
- 2 tbsp white wine vinegar
- 4 Tbsp sunflower oil
- 1 pinch sugar
- pepper (ground)
- 2 tbsp sunflower seeds
Instructions

Peel, wash and cut the potatoes into bite-sized pieces. Boil in salted water for about 20 minutes.

Wash, trim and blanch the beans in salted water for about 8 minutes until slightly firm. Shock, drain and cut into 3-4 cm long pieces. Wash and trim the spring onions and slice into thin rings. Rinse the oregano, shake dry, strip leaves and roughly chop.

Whisk vegetable broth with mustard, vinegar and oil; season with salt, sugar and pepper.

Drain the potatoes and let them steam off. While still warm, mix with dressing, beans, spring onions and oregano. Let rest about 10 minutes, taste, then sprinkle sunflower seeds before serving.
