Various Spicy Waffles with Salad

- 80 g Butter
- 3 eggs (separated)
- 200 g Flour
- 200 ml milk
- 2 carrots
- Lemon juice
- 150 g fresh spinach leaves
- 60 g Gouda cheese
- vegetable oil (for the waffle iron)
- 2 tbsp chives rings
- 1 head lettuce
- 250 g Mushrooms
- 2 tbsp wine vinegar
- 1 tsp sharp mustard
- 4 tbsp olive oil
- Salt
- pepper (ground)
Instructions

Separate and clean salad leaves, rinse, dry, and cut into pieces. Clean mushrooms and finely slice them. Whisk together vinegar, oil, salt, pepper, and mustard to make a dressing.

Beat butter until fluffy, separate eggs, whip egg whites stiffly, and refrigerate. Beat yolks with salt and butter until creamy; sift flour with baking powder and fold in milk. Cover batter and let rest 30 minutes.

Peel carrots, wash, grate finely, and blend with lemon juice into a smooth puree. Wash spinach, blanch in boiling salted water, cool under cold water, squeeze out excess moisture, and chop finely. Grate cheese.

Divide batter into three bowls; mix one with carrot puree, another with spinach, and the third with cheese. Fold in whipped egg whites and season with salt and pepper. Heat waffle iron and brush with oil.

Combine mushrooms with dressing, spread on plates, and sprinkle with chives rings.

Scoop small portions of each batter into the waffle iron and bake sequentially. Cut waffles in half, stack them atop the salad on plates, and serve hot.
