Vietnamese-Style Vegetable Soup

Ingredients
- 2 cloves garlic
- 1 piece ginger (5 cm)
- 1 chili pepper
- 1 tsp salt
- 1 onion
- 1 tbsp oil
- 1 l vegetable stock
- 100 g carrots
- 200 g cauliflower
- 100 g green beans
- pepper (ground)
- 4 Spring Onions
- 1 bundle coriander leaves
Instructions

Peel the garlic and ginger, roughly chop with the chili, then grind with 1 tsp salt in a mortar. Peel the onion and slice into strips.

Sauté the onion and spice paste in a pot with 1 tbsp oil briefly, add stock and bring to a boil. Peel and slice carrots, break cauliflower into florets, trim green beans and cut diagonally.

Add the vegetables to the broth, cook for 6-8 minutes, season with salt and pepper. Wash, trim and finely chop spring onions. Wash coriander leaves and remove stems. Sprinkle over the soup.
