Soybean Soup

Ingredients

  • 300 g dried soybeans
  • 1 bundle mirepoix
  • 1 onion
  • 1 bay leaf
  • 2 Spring Onions
  • 2 red bell peppers
  • 3 tbsp olive oil
  • 2 Garlic cloves
  • 3 tbsp tomato paste
  • 125 ml dry red wine
  • Salt
  • Tabasco

Instructions

    Soak the beans overnight in about 1 l of water.

    Wash, trim and rebind the mirepoix. Peel one onion, cut it lengthwise in half, then add to the beans with the bay leaf; bring to a boil and simmer covered over low heat for about 50-60 minutes.

    Wash, trim, deseed and dice the bell peppers. Wash, trim and finely chop the spring onions. Heat oil and sauté the spring onions, add the peppers, and press in the garlic cloves. Stir in tomato paste with red wine and steam covered for 5 minutes.

    Remove the onion halves, mirepoix and bay leaf from the pot of beans.

    Add the vegetables to the beans, pour in a little water, season with salt and Tabasco, and simmer for another 10 minutes. Taste and serve.
