Vietnamese-Style Fortune Rolls

Ingredients
- 500 g Thai asparagus
- Salt
- 8 rice paper sheets
- 8 small salad leaves (e.g., lettuce)
- 16 cooked shrimp (ready-to-use)
- 3 tbsp Rice vinegar

Wash the asparagus spears and blanch in plenty of salted water for 2-3 minutes. Rinse and drain. Cut in half if desired.

Fill a shallow bowl, slightly larger than the rice paper sheets, with water. Place a kitchen towel beside it and have a second towel ready. Dip each sheet individually into the water and soak for about 1 minute. Then carefully lay them on the towel and pat dry with the second towel. Place a washed and cleaned salad leaf in the center of the soft rice sheet, add some asparagus spears, and two halved shrimp lengthwise. Drizzle with a little vinegar. Fold two opposite edges inward and roll the rice paper around the filling. Repeat with the remaining sheets. Cut all rolls across the middle once. Arrange four half rolls per portion on a plate and serve.
