Veggie Wrap with Rice, Beans, Lettuce and Tomatoes

Ingredients
- 150 g long-grain rice
- Salt
- 150 g canned kidney beans
- 4 tomatoes
- 8 head lettuce leaves
- 2 tbsp plain yogurt
- 150 g Sour cream
- Pepper (freshly ground)
- lime juice
- 4 ready-made wraps (~22 cm diameter)
Instructions

Cook the rice in 300 ml boiling salted water.

Meanwhile, rinse the beans under a sieve and drain. Wash the tomatoes, quarter them, remove seeds, and dice into small cubes.

Wash the lettuce leaves, dry with a towel, and tear slightly smaller pieces.

Remove the rice from heat and let it cool. Mix yogurt with sour cream and season with salt, pepper, and a splash of lime juice.

Warm each wrap briefly in a hot pan, spread the sour cream mixture on top, add a spoonful of rice in the center. Distribute beans and tomato cubes over it, finish with lettuce leaves, fold the wraps closed. Press edges firmly together and serve the wraps halved.
