Vegetarian Tartare

Vegetarian tartare from Spoonsparrow is quick to make and makes a great starter in spring.

Ingredients

  • 200 g white asparagus
  • 200 g radishes
  • 0.5 cucumber
  • 1 Shallot
  • Salt
  • 0.25 tsp coconut palm sugar
  • 0.5 tsp coarse mustard
  • 2 tbsp vinegar
  • 2 tbsp linseed oil
  • 1 sprig parsley
  • 1 sprig chervil
  • 10 g wild garlic
  • 200 g sour cream (10% fat)
  • 2 tbsp crème fraîche (20 g)
  • 1 tbsp Lemon Juice
  • Pepper
  • 1 packet mixed garden cress

Instructions

    Clean and peel the asparagus, trimming the woody ends. Wash the radishes and cucumber. Peel the cucumber if desired, cut lengthwise in half, remove seeds, and set aside. Halve and peel the shallot.

    Finely dice the prepared ingredients. Mix with salt, sugar, mustard, vinegar, and oil, then let rest until serving.

    Wash, dry, and finely chop the herbs for the sauce. Blend with sour cream, crème fraîche, lemon juice, cucumber seeds, a pinch of salt, and pepper to create a smooth dressing.

    Arrange the vegetarian tartare in the center of plates using a ring mold, spread the herb sauce around it, and sprinkle garden cress on top.
