Salmon Carpaccio with Parmesan and Green Pepper

Ingredients

  • 400 g very fresh salmon fillet
  • 2 Organic lemons
  • 4 tbsp olive oil
  • 1 pinch whole cane sugar
  • Sea salt
  • 1 tbsp pickled green peppercorns (jar)
  • 40 g arugula (1 bundle)
  • 20 g Parmesan (1 piece)
  • Pepper

Instructions

  1. 1.

    Rinse the salmon under cold water and pat dry. Slice into very thin pieces and arrange on plates.

    For the dressing, squeeze one lemon and whisk the juice with olive oil, a pinch of sugar, salt, and green peppercorns.

  3. 3.

    Wash the arugula and spin dry. Grate the Parmesan.

  4. 4.

    Drizzle the dressing over the salmon and season with a little pepper.

  5. 5.

    Rinse the remaining lemon in hot water, dry and grate it, then slice into rounds.

    Garnish the salmon with lemon slices, arugula, and Parmesan shavings and serve immediately.
