Vegetarian Soufflé

Ingredients

  • 500 g Cauliflower
  • 4 egg yolks
  • Salt
  • ground pepper
  • nutmeg
  • 4 egg whites
  • butter
  • 2 shallots
  • 20 g butter
  • 20 g flour
  • 20 ml white wine
  • 100 ml vegetable stock
  • 100 ml whipping cream
  • Salt
  • ground pepper

Instructions

    Clean the cauliflower, cut into florets and blanch in boiling salted water for about 8-10 minutes. Drain.

    Let the cauliflower cool slightly and puree. Stir egg yolks into the cauliflower mixture and season with salt, pepper and nutmeg. Whisk egg whites until stiff and fold in. Butter the ramekins and fill with the mixture. Cover with foil. Place the ramekins on the oven rack and bake at 200°C (medium) for about 20-25 minutes until golden.

    For the sauce, finely chop shallots and sauté in butter. Add flour and deglaze with white wine.

    Stir in vegetable stock to smooth, then fold in cream and season with salt and pepper. Plate the soufflé, pour sauce over it and garnish with chopped herbs. Pairs well with fish and meat dishes.
