Ingredients

  • 1 green bell pepper (finely diced)
  • 1 carrot (finely diced)
  • 125 g finely chopped onions
  • 2 minced garlic cloves
  • 2 finely chopped red chili peppers
  • 2 tbsp starch
  • 70 g grated cheese
  • 100 g breadcrumbs
  • 1 tbsp Sesame seeds
  • 1 tbsp oil
  • Salt
  • oil for frying
  • 250 g baby corn (canned, cut small pieces)
  • red and green bell pepper strips (fine)
  • 2 white cabbage leaves (thin strips)
  • 1 small soybean sprouts
  • 1 diced onion
  • 3 tbsp oil
  • 0.5 tsp turmeric
  • Salt
  • Pepper

Instructions

    Heat oil in a wok or skillet and stir-fry the peppers, cabbage, and onions; add turmeric and about ½ cup of liquid, cover and cook for 4 minutes, then add corn and sprouts and cook another 3 minutes. Season with salt and pepper.

    For the patties, heat 1 tbsp oil in a pan and sauté onions, garlic, then add peppers and carrots and cook 4–5 minutes; season with salt, stir in starch and cheese, and let cool. Divide the mixture into 10 equal portions, shape into patties, coat in breadcrumb-sesame mix, and fry both sides until golden brown.

    Plate the patties with vegetables and serve with basmati rice sprinkled with peanut seeds.
